The problem is considered of rheological behaviour of non-Newtonian liquids, which is determined by nonlinear kinetic processes of reduction-disintegration of bonds between structural elements of a medium. Corresponding kinetic equations are used as closure relationships when describing nonstationary motions of such liquids in the gap between cylinders of the rotational viscometer. It is shown, that auto- and stochastic oscillations may result during joint action of nonlinear kinetics of structural changes in a liquid and viscometer inertial properties during measuring non-Newtonian liquids viscosity.
